4th of July Fruit Pizza

A festive and refreshing dessert featuring a buttery sugar cookie crust, creamy tangy cream cheese frosting, and vibrant red, white, and blue fresh fruits arranged like the American flag — perfect for celebrating Independence Day!

  • Total Time: 30 minutes
  • Yield: 8-10 servings 1x

Ingredients

Scale

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract

For the frosting:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup whipped topping (optional, for lighter frosting)

For the fruit topping:

  • 1 ½ cups strawberries, sliced
  • 1 cup blueberries
  • 2 medium bananas, sliced
  • ½ cup raspberries (optional)
  • 2 tbsp shredded coconut (optional, for white accents)

Instructions

  • Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or baking sheet with parchment paper.
  • Prepare the crust: In a bowl, whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add egg and vanilla; mix well. Gradually add dry ingredients until combined.
  • Shape the dough: Press dough evenly onto the prepared pan forming a circle about ¼ inch thick.
  • Bake crust for 12-15 minutes or until edges are lightly golden. Remove and cool completely on a wire rack.
  • Make frosting: Beat cream cheese until smooth. Add powdered sugar and vanilla; beat until creamy. Optionally fold in whipped topping for fluffiness.
  • Assemble pizza: Spread frosting evenly over cooled crust. Arrange strawberries and raspberries in stripes for the red areas, bananas and coconut flakes for white stripes, and blueberries clustered in the top corner to mimic the flag’s star field.
  • Serve immediately or refrigerate until ready to serve.

Notes

  • Use ripe, firm fruits to avoid sogginess.
  • For gluten-free crust, substitute flour with a gluten-free baking mix.
  • You can add a light apricot glaze over fruit to keep it shiny and fresh longer.
  • Prepare the crust a day ahead to save time.
