- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 1 cup shredded cheddar cheese
- ½ cup buffalo sauce (such as Frank’s RedHot)
- ½ cup panko breadcrumbs (for a crispy texture)
- ¼ cup cream cheese (softened)
- 1 egg, beaten
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped green onions (optional, for garnish)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix Ingredients: In a large bowl, combine shredded chicken, cheddar cheese, buffalo sauce, panko breadcrumbs, onion powder, salt, and black pepper. Mix well.
- Shape the Bites: Use a spoon or your hands to scoop the mixture and roll it into 1-inch balls. Place them on the prepared baking sheet.
- Bake: Bake for 15-18 minutes or until golden brown and crispy on the outside.
- Serve: Drizzle extra buffalo sauce over the bites and garnish with chopped green onions. Serve with ranch or blue cheese dressing.
Notes
- Make-Ahead Tip: Prepare the chicken mixture up to 24 hours in advance and store it in the refrigerator until ready to bake.
- Serving Idea: Serve with celery sticks, carrot sticks, and additional buffalo sauce for dipping.
- Air Fryer Option: Cook at 375°F for 10-12 minutes, shaking halfway through.
- Milder Option: Use a milder hot sauce or mix buffalo sauce with a little honey or melted butter.
