Creamy Tomato Soup

Turkey Chili
- 1 lb ground turkey
- 1 can (15 oz) of kidney beans, drained
- 1 can (15 oz) of diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
Creamy Tomato Soup:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking for about 5 minutes until softened.
- Add the crushed tomatoes, dried basil, oregano, and sugar. Stir to combine and let it simmer for about 15 minutes.
- Stir in the heavy cream and let it cook for another 5 minutes. Season with salt and pepper to taste.
- Use an immersion blender to blend the soup until smooth (optional for texture).
- Serve hot and enjoy your creamy, gluten-free tomato soup.
Turkey Chili:
- In a large pot, cook the ground turkey over medium heat until browned.
- Add the chopped onion and bell pepper, cooking for another 5 minutes until softened.
- Stir in the kidney beans, diced tomatoes, chili powder, cumin, and smoked paprika.
- Let the chili simmer on low heat for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
