Instructions

  • Prepare the Pistachios: Blend the pistachios in a food processor or blender until finely ground.
  • Heat the Milk and Cream: In a saucepan, combine the milk, cream, and sugar. Heat over medium heat until it just starts to steam, but do not let it boil.
  • Make the Custard: In a separate bowl, whisk the egg yolks until smooth. Slowly add the hot milk and cream mixture into the eggs, whisking constantly to avoid curdling.
  • Cook the Custard: Return the mixture to the saucepan and cook over low heat, stirring continuously, until the custard thickens and coats the back of a spoon (about 5–7 minutes).
  • Add Pistachios and Cool: Remove from heat and stir in the ground pistachios, vanilla extract, and a pinch of salt. Let the mixture cool to room temperature.
  • Chill: Once cooled, cover the custard and place it in the refrigerator for at least 4 hours or overnight.
