Sausage, Egg, and Cheese Breakfast Roll-Ups

These Sausage, Egg, and Cheese Breakfast Roll-Ups are a perfect combination of savory sausage, scrambled eggs, and melted cheese wrapped in a soft flour tortilla. Quick and easy to make, they’re a great way to start your day with a balanced meal of protein, healthy fats, and carbs.

  • Total Time: 20 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 6 breakfast sausage links, cooked
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • 6 flour tortillas (soft taco size)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese (optional)
  • 2 tablespoons butter or cooking spray

Instructions

  • Cook the Sausage:
Cook the breakfast sausage links in a skillet according to package instructions. Once cooked, remove from the skillet, set aside to cool, then slice into bite-sized pieces.
  • Scramble the Eggs:
In a medium bowl, whisk the eggs with milk, salt, and pepper. Heat a skillet over medium heat, add butter or cooking spray, and scramble the eggs until just set. Remove from heat.
  • Assemble the Roll-Ups:
Lay the flour tortillas flat and evenly distribute the scrambled eggs, sausage pieces, and shredded cheeses. Roll up the tortillas, folding in the sides to secure the filling.
  • Cook the Roll-Ups:
Heat a non-stick skillet over medium heat. Place the roll-ups seam-side down and cook for 2-3 minutes on each side, or until golden and crispy. Alternatively, bake in the oven at 375°F (190°C) for 10-12 minutes.

Notes

  • Make-Ahead Tip: These roll-ups can be made in advance and stored in the fridge for up to 3 days or frozen for up to 2 months. Simply reheat in the microwave or oven.
  • Customization: You can substitute the sausage with turkey sausage, bacon, or even a vegetarian alternative. Add sautéed vegetables like peppers, onions, or spinach for extra flavor and nutrients.
