- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese (optional)

Instructions
- Cook the Sausage:
Cook the breakfast sausage links in a skillet according to package instructions. Once cooked, remove from the skillet, set aside to cool, then slice into bite-sized pieces. - Scramble the Eggs:
In a medium bowl, whisk the eggs with milk, salt, and pepper. Heat a skillet over medium heat, add butter or cooking spray, and scramble the eggs until just set. Remove from heat. - Assemble the Roll-Ups:
Lay the flour tortillas flat and evenly distribute the scrambled eggs, sausage pieces, and shredded cheeses. Roll up the tortillas, folding in the sides to secure the filling. - Cook the Roll-Ups:
Heat a non-stick skillet over medium heat. Place the roll-ups seam-side down and cook for 2-3 minutes on each side, or until golden and crispy. Alternatively, bake in the oven at 375°F (190°C) for 10-12 minutes.
