For the Smash Burger Tacos:
- 1 lb ground beef (80/20 blend)
- 6 small flour tortillas (6–8 inch)
- 6 slices American cheese (or cheddar, pepper jack)
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 1 cup shredded lettuce
- ¼ cup diced onion
- ¼ cup sliced pickles
- 1 medium tomato, diced (optional)
For the Special Sauce:
- ¼ cup mayonnaise
- 1 tbsp ketchup
- 1 tsp yellow mustard
- 1 tsp sweet relish
- ½ tsp garlic powder
Instructions
- Prep the Sauce
In a small bowl, mix together mayonnaise, ketchup, mustard, relish, and garlic powder. Set aside or refrigerate. - Form Beef Balls
Divide ground beef into 6 equal 2.5–oz portions. Roll into loose balls. Season lightly with salt and pepper. - Preheat the Griddle or Skillet
Heat a cast iron skillet or flat griddle over medium-high heat until hot (you should see a light smoke). - Smash the Patties
Place a tortilla on the skillet. Immediately press a beef ball onto the center using a spatula or burger press. Smash thin and hold for 10 seconds to get a crust. - Flip and Add Cheese
After 2–3 minutes, flip the tortilla and beef patty combo. Add a slice of cheese on top. Let it cook for another 1–2 minutes until the cheese melts and tortilla crisps. - Assemble the Tacos
Remove from heat. Spread a spoonful of special sauce over the meat. Top with lettuce, onions, pickles, and tomatoes (if using). Fold gently and serve hot.
Notes
- For extra crispiness, toast tortillas lightly before cooking.
- Substitute beef with turkey or plant-based meat for dietary preferences.
- Avoid overloading with toppings to keep tacos from tearing.
