Instructions

  1. Prep the Sauce
    In a small bowl, mix together mayonnaise, ketchup, mustard, relish, and garlic powder. Set aside or refrigerate.
  2. Form Beef Balls
    Divide ground beef into 6 equal 2.5–oz portions. Roll into loose balls. Season lightly with salt and pepper.
  3. Preheat the Griddle or Skillet
    Heat a cast iron skillet or flat griddle over medium-high heat until hot (you should see a light smoke).
  4. Smash the Patties
    Place a tortilla on the skillet. Immediately press a beef ball onto the center using a spatula or burger press. Smash thin and hold for 10 seconds to get a crust.
  5. Flip and Add Cheese
