For the Cinnamon-Sugar Tortilla Chips:
- 8 small flour tortillas
- ¼ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 1 teaspoon ground cinnamon
For the Cheesecake Cream:
- 8 oz (1 block) cream cheese, softened
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy whipping cream
Topping:
- 1½ cups fresh strawberries, diced
- Optional: mint leaves, strawberry jam drizzle, mini chocolate chips, chopped nuts
Instructions
Preheat oven to 375°F (190°C) or preheat air fryer to 350°F (175°C).
Make cinnamon-sugar chips:
- Mix sugar and cinnamon together.
- Brush both sides of tortillas with melted butter.
- Sprinkle with cinnamon sugar.
- Cut each tortilla into 6 wedges.
- Bake on a parchment-lined sheet for 8–10 minutes (or air fry in batches for 4–5 minutes) until golden and crisp. Let cool.
Prepare cheesecake topping:
- In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream to soft peaks.
- Gently fold whipped cream into cream cheese mixture until fluffy.
Assemble nachos:
- Arrange chips on a large platter or serving tray.
- Spoon or pipe dollops of cheesecake topping over chips.
- Scatter diced strawberries on top.
- Garnish with mint, chocolate chips, or jam drizzle.
Serve immediately for best texture.
Notes
- Make chips in advance and store in an airtight container.
- Cheesecake mixture can be refrigerated for up to 3 days.
- Use ripe, sweet strawberries for best results.
- Don’t assemble until just before serving to prevent sogginess.
